Osip: A Michelin Star Escape Amid Rolling Hills

Chef Merlin Labron-Johnson’s acclaimed restaurant Osip, set in a 17th-century coaching inn, debuted four chic bedrooms in June 2025. It’s the epitome of British countryside chic, complete with its own farms and scenic rolling hills. The intimate restaurant, which holds one Michelin star, is a destination unto itself, but the rooms only make it more desirable, particularly for a weekend away. It’s the sort of place that assures travelers that if you stay here, you have good taste.

Design & Character

In 2024, Osip relocated from central Bruton to the adjacent countryside, setting itself up in a former coaching inn where travelers used to find respite on the way to and from London. Alongside the contemporary British restaurant, Labron-Johnson envisioned several comfortable bedrooms on the upper floor. He enlisted designer Johnny Smith for the renovation, which created airy, minimalistic spaces that span two stories. The design connects to the downstairs lounge and dining room, which are adorned with local artwork and custom pieces, including a leather door curtain that was made especially for Osip. The color palette is muted and serene, creating a relaxed but still upscale atmosphere. During warmer months, there’s an outdoor space behind the kitchen, and guests can request to visit one of the restaurant’s nearby farms.

The Rooms

The rooms at Osip are elegantly minimalistic and feature immaculate details like free-standing bathtubs, impossibly soft Tielle sheets, and the restaurant’s own Maison Osip toiletries. A bottle of Dowding’s local apple juice and a place of canelés, baked downstairs, await guests, while the cozy robes come via sustainable clothing brand Coconut Residence. The flourishes of wood and natural textiles evoke the outdoor landscape, an invitation to fully unwind in the silence of the countryside.

Food & Drink

The main draw of Osip is its restaurant, which can be booked without actually staying over. The food is farm-to-fork and showcases the produce grown on Osip’s own local farms. The tasting menu changes daily to reflect what’s in season, and the dishes tend to be both artful and flavorful. It’s available for lunch or dinner, with a longer, more involved menu offered in the evenings. Breakfast is included for those staying in the rooms, and it’s an absolutely delightful affair, featuring baked goods, smoked fish, and fruit.

Amenities

Although the typical hotel amenities are scarce, the rooms are so well-appointed, and the breakfast is so good that you likely won’t feel like anything is missing. There is a concierge available to help with local recommendations or transportation to and from the nearby train station. If you want something extra, the Hayloft Spa at Holbrook is a six-mile drive away.

Osip is a short drive from the artsy town of Bruton, a popular Somerset destination that is home of Hauser & Wirth’s expansive indoor/outdoor gallery. It has recently evolved into a culinary hub, thanks in part to Osip. In town, Labron-Johnson also helms The Old Pharmacy, a more casual seasonal restaurant set in Osip’s original space. At the Chapel is an all-day restaurant with an in-house artisan bakery, serving modern British dishes, while Margot Henderson’s nearby pub, The Three Horseshoes, is worth a visit for Sunday lunch. Visitors can indulge in local cheese at Westcombe Dairy, or taste-test English wines at Wraxall Vineyard. Slightly farther out is Stonehenge, although the ancient site is on the drive from London to Bruton, making it the perfect pit stop.
