Since opening in 2021, the Accord, New York retreat has quickly become one of the Hudson Valley’s most talked-about escapes. Its aesthetic strikes a balance between Scandinavian simplicity and rustic Americana, a design-forward approach that signals a new era for Catskills hospitality.

While the clean-lined interiors and minimalist cabins might be what first catch your eye—particularly that now-iconic draped curtain moment that seems to pop up on every design lover’s Instagram feed—the surrounding landscape is just as compelling. Landscape designer Miranda Brooks shaped the property’s 220 acres into a pastoral patchwork of wildflower meadows, gravel paths, and carefully framed vistas.

A stroll across the grounds feels almost cinematic. Pebbled trails weave through tall grasses and native plantings, guiding guests toward the Farmhouse for coffee in the morning or the restaurant at sunset.

When it comes to accommodations, guests can opt for one of the property’s standalone cabins or a room inside the historic Farmhouse. The cabins are especially charming, with private porches and wood-burning stoves that make them feel like a modern interpretation of the classic countryside escape.

Inside, the design is quietly luxurious without feeling overdone. Beds are dressed in Frette linens, and curated minibars feature locally sourced snacks and beverages—ideal for unwinding after a day spent exploring the property.

One of the defining features that sets INNESS apart from other Hudson Valley retreats is its nine-hole links-style golf course. Designed by King Collins—the architecture firm behind Tennessee’s cult-favorite Sweetens Cove—the course blends seamlessly into the natural terrain with rolling greens, creative bunkers, and strategic layouts that keep golfers on their toes.

Guests can test their skills on the famously tricky “Lion’s Mouth” bunker before heading to the Golf Bar for a refreshing INNESS Lager. Others may prefer a more leisurely afternoon by one of the property’s two saltwater pools, including a larger one near the Events Barn overlooking expansive fields that stretch toward the horizon.

They are also renowned for the Restaurant and Bar at INNESS, where Chef Alex Napolitano crafts a menu rooted in local ingredients and seasonal cooking. Like the rest of the property, the dining room leans into warm wood tones and natural light, anchored by a striking marble bar.

Seasonally driven dishes, handmade pastas, and vegetables harvested from the onsite garden pair beautifully with the restaurant’s natural wine list. The best seat in the house, however, might just be the veranda, where sweeping views of the Shawangunk Mountains—known locally as The Gunks—provide an unforgettable backdrop.

The sourdough bread service with whipped butter and marinated olives is a perfect start. Crisp salads filled with arugula and snap peas offer a refreshing contrast to richer dishes like roasted spaetzle with oyster mushrooms and Comté cheese. For something heartier, the flat iron steak frites rarely disappoints, while Basque cheesecake finished with agrodolce makes for a fitting finale.
