The Hottest Boutique Hotel Openings of Summer 2025

This summer, a wave of new boutique hotels is opening their doors across the globe. From the sun-drenched shores of the Greek islands to the stunning peaks of the Italian Dolomites, these spots are destinations in their own right. Anything but ordinary, these stays are complete with design-forward interiors, Michelin-starred restaurants, curated itineraries, and thoughtful touches that go well beyond thread count. Whether you’re wishing for warm days by a private plunge pool in Paros, a stylish mountain base in Jackson Hole, or a quintessential city stay in London, these hotels will turn your vacation into a summer dream. Consider this your insider guide to the season’s most buzzworthy new hotels.

Hotel Wren (Twentynine Palms, CA)

Just 10 minutes from the lesser-traveled north entrance of Joshua Tree National Park, Hotel Wren is a new 12-room hotel that’s actively rewriting the story of the old roadside motels. Dreamed up by design-forward Manola Studio, this adults-only spot is simple yet chic. Saltwater pool dips, bodega hauls from Windsong, and a cozy library are all part of the experience. Bonus: It has a few pet-friendly rooms, EV charging stations, and no TVs.

Vista Ostuni (Puglia, Italy)

Set to open in July, Vista Ostuni is located in the heart of Puglia’s “White City.” Just a short stroll from Ostuni’s historic center, this boutique hotel is tucked inside a recently restored 14th-century palazzo—think vaulted ceilings, chic suites, and secret gardens with ancient olive trees. Guests can find indoor and outdoor pools, a rooftop with incredible views, and two restaurants by Michelin-starred chef Andrea Berton. Add in a relaxing spa and curated trips to Lecce, Matera, and beyond, and it’ll become your new go-to for sun-soaked luxury in southern Italy.

The Newman (London, United Kingdom)

Found on its namesake street in Fitzrovia, The Newman was designed by Lind + Almond with a wink to the neighborhood’s cool, bohemian past. This 81-room stay is made complete with its Art Deco flair, a light-filled European brasserie, a moody cocktail bar, and a full-floor wellness area featuring a hydrotherapy pool, Nordic-inspired spa, and meditation studio. It’s smart, social, and effortlessly chic—exactly what Fitzrovia ordered.

Vione Paros (Paros, Greece)

Welcome to Vione Paros, a super-luxe adults-only hideaway (14+) set on the shores of Ambelas. This five-star hotel has 40 sleek suites—28 of which come with their own private pools—and gorgeous Aegean views. The heart of the property is the spa, which has a heated indoor pool, hammam, Jacuzzi, couples’ suite, and holistic wellness rituals. Add in quiet gardens, perfect sea views, and VIONE by Mario—a new culinary spot—and you've got Paros’s most exclusive new escape.

Casa Cook Madonna (Madonna di Campiglio, Italy)

Head to the Italian Dolomites to find the brand-new Casa Cook Madonna. This 50-room mountain retreat is design-forward, with stone, timber, wool, and a moody, minimalist palette that mirrors the landscape. Fit for year-round adventure, guests can hit the slopes or hiking trails straight from the door, then unwind in the spa, sauna, or yoga studio. Dining is truly top-tier, with a restaurant helmed by three-Michelin-star chef Jacob Jan Boerma. Stylish, tasteful, and built for all seasons—Casa Cook Madonna is what we call mountain living, reimagined.

Hotel Burg (Virginia, USA)

Head to Leeburg, Virginia, to find this 39-room hotel that pairs Ralph Lauren-esque interiors with antique accents and curated regional art. Designed for stylish escapes and vineyard-hopping weekends, Hotel Burg has perks like a rooftop sundeck, an infrared sauna, and its own members-only hideaway, The Chase. Plus, enjoy meals at The Huntōn, courtesy of Michelin-starred Chef Vincent Badiee.

The Nickel Hotel (Charleston, SC)

Opening on Charleston’s beloved (and buzzing) Upper King Street, The Nickel Hotel is the next big thing in Southern charm. From the team behind two Michelin Key hotel The Pinch, this 50-room boutique stay has incredible architecture (designed in collaboration with Morris Adjmi), beautiful courtyards, a guest-only cocktail bar, and a rooftop lounge with views of downtown. It’s sleek, modern, and sure to shake up the scene.

Larch House (Whitefish, Montana)

Whitefish, Montana, will soon be home to Larch House, a 39-key luxury retreat that sprawls across 10 buildings in the historic Railway District, just steps from the river and a short drive to Glacier National Park. Guests can expect rooftop mountain views, a speakeasy, heated bathroom floors, Pendleton quilts, and Alpine-inspired dining at Enga. With a private art collection, custom furnishings, and access to year-round adventures from fly fishing to skiing, Larch House has fully reimaged the typical mountain lodge into a stylish, sustainably built stay.

Palácio de Tavira (Tavira, Portugal)

Set in a sleepy coastal town, Palácio de Tavira is all about laidback elegance, thanks to natural materials, locally inspired design, and great rooftop vibes. Sip Portuguese wine by one of two plunge pools, enjoy hyper-local flavors at the in-house restaurant, and soak up a stylish slice of the Algarve that’s anything but ordinary.

The Asticou (Maine, USA)

Fresh off a $28 million, year-long renovation, The Asticou is back and better than ever. This iconic Maine escape—dating back to 1884—has hosted generations of socialites and political names alike, and now it's welcoming a new era of travelers with 82 rooms (including spa suites and waterfront cottages), a fine-dining restaurant, cozy bar, heated pool, and luxe wellness offerings in collaboration with sister property The Claremont. Set on 25 acres in Northeast Harbor, with Acadia National Park at its doorstep, the reimagined design has hints of old-world European elegance and early American charm, including nature-inspired palettes and custom toile wallpaper featuring art by David Allen (which gives a nod to neighbor Martha Stewart’s Skylands estate).
